With her speed, it'd be very difficult to actually catch her without using extensive jutsu or traps, some of which could be potentially fatal or cause serious injury, which Kakashi isn't particularly interested in trying out, unless it's in the Battle Dome.

Yoruichi not only is fast, but it appears she can fly -- after all, she's just hanging out in the air and that's not something the average person can do. There aren't many others who can move like her, but Vegeta certainly comes to mind as one of the few who can. ]
